La cuisine de l'Heure Bleue

Products from the local Saintes market, organic vegetables and fruits, the cuisine is inspired by the seasons and arrivals, in particular for fish and seafood from the Cotinière fish market.

The market is held every day except Monday in different locations around the city.

The tide arrives in the early morning and the local artisans and producers of Essarts, Corme Royal and Thénac set up their stalls offering the best of the hinterland.

Gigouri, Charentais crickets, entrecôte and mature cheeses then chat with oysters from the claires, whelks and céteaux from the coast.
